I am amazed at just how COLORFUL my food is now that I’ve started eating a plant-based diet. It never occurred to me before, but almost everything I ate back then was either brown or gray.
When I opened my lunchbox last Tuesday at work, I saw a dark green salad (spinach and spring mix) with deep red dried cranberries, bright orange raw carrots, light green raw celery, deep purple grapes, black beans, white (parboiled) rice, and red salsa.
There was some brown – peanut butter, sunflower seeds apple cider vinegar and creole mustard dressing, and some tortilla chips – but overall, it’s like I opened my lunch box and one of my daughter’s cartoons burst out.
I really thought I would miss meat and dairy more. But I’m really enjoying my food so much more than I used to. I’m eating what I want, when I want, and as much as I want, and I’m still losing weight.
I know I’m still new at this and full of newbie enthusiasm, but I think I’m gonna make it. I feel so much better than I used to, and I don’t even miss the old foods.
